Home-made Crispy Fries
Like many American households, we are a family of French fry connoisseurs. Some times we like our fries ‘shoe-string’ style, other times we like them ‘steak’ fry style and then we have this delicious, baked crispy fry.
This recipe is a bit like the potato wedges/Jo-Jos that you can buy in delis & convenience stores. Since they are baked instead of deep-fried, they are even a tad healthier.
I serve these with a variety of different dishes. From hot dogs to French dip, they make a nice side dish that the kids and my husband, the over-grown kid love.
I should also note that there is a roasted potato mix by Concord Foods that makes the same type of roasted fry. If you can find it (often in the produce section), I highly recommend it. But if you can’t find, this recipe should do the trick.
Home-made Crispy Fries

Ingredients
- 4 medium Russet potatoes
- 1 tablespoon Vegetable or Olive oil
- 1/4 teaspoon Ground pepper
- 1/8 teaspoon Salt
- 1/2 teaspoon Paprika
- 1/4 teaspoon Onion powder or salt
- 1/2 teaspoon Garlic powder or salt (or 2 cloves garlic, finely chopped)
Directions
| Step 1 | Mix pepper, salt, paprika, onion and garlic powder/salt in a small bowl. Sprinkle potatoes with oil and spice mixture. Toss gently to combine. | |
| Step 2 | Cut potatoes into large wedges. Place potatoes in a clean, large bowl. | |
| Step 3 | Mix pepper, salt, paprika, onion and garlic powder/salt in a small bowl. Sprinkle potatoes with oil and spice mixture. Toss gently to combine. | |
| Step 4 | Arrange seasoned potatoes in a single layer on a prepared baking sheet. | |
| Step 5 | Baked potatoes for 20 minutes. Using a spatula, turn potatoes. Bake until golden brown, about 20 minutes, turning baking sheet after 10 minutes for even browning. |
Variations
1) Add 1 Tbsp. Parmesan cheese
2) Add 1 Tbsp. ground, dry parsley
3) Add 1 Tbsp. dry rosemary
You can add all of these or just one. I'm sure there are several other spices and herbs that would be just as tasty!
